Making a special trip to the store today (after work) so I can stock up on items I need to make this challenge a success.
I was thinking, I should call this the "thrifty meatless challenge". LOL!!
Breakfast
1 Strawberry Lemonade Yoplait yogurt
1 cup of oatmeal ( Quaker brand single package..apples & cinnamon) I know its a lot of sugar oppose to the regular oatmeal but I haven't made the trip to the store yet so I'm trying to make due with what I have.
Water now let me tell you, I work in a hospital so I like to use the water pitchers because the liners that are inside of the pitcher is 20 fluid oz. So I usually try to drink at least 2 within a 8 hour period so that's 56 oz of water and they day still isn't over. In that way I at least know, I'm going to drink more water before the day is over with and I'm getting my daily intake of water.

2 Egg Whites
Lunch
Fruit Salad 2 cups of fruit
1 Cup of Collard greens
More water
Snack
Yoplait yogurt strawberry
Dinner
Red Beans & Rice
Snack
Pistachio nuts
Water
