This is by far the easiest stir-fry you can make! While at the same time being considered a healthy quick dinner choice in my opinion.
I tried my best with these measurements :-) But I will still put up my disclaimer

I almost never measure. I taste as I go along and judge how much seasonings to put in from there.
Here's what you'll need:
1 lb Boneless Skinless Chicken Breast Cut into Cubes or thin slices
2 tbsp Oil (Olive oil, Canola etc)
4 tbsp Soy Sauce
1/2 tbsp Ground Ginger
1/2 tbsp Garlic Powder
Salt ( To taste)
1 tbs Crushed red peppers ( If you prefer it spicy)
1 1/2 or 2 stalks of celery
1 Onion
1/2 Green Pepper
1/2 Red Pepper
2 Cloves of Garlic
1 Cup of Broccoli Florets
8 oz Chicken broth
2 tbsp of Corn Starch
Wok (optional) I didn't use one
If you prefer you can add water chestnuts (I didn't)
(Excuse my red pepper and broccoli it was still kind of frozen, I was just trying to get a prep picture:-)
Cut 1 pound of skinless boneless chicken breast into thin slices or cubes. Heat the oil in a nonstick pan over medium high heat and add the chicken when hot. Just to make sure my chicken is seasoned perfectly, sprinkle 1 tbsp of garlic powder and a little salt to the chicken and mix it in well. Make sure you stir the chicken frequently. While the chicken is cooking, combine the soy sauce, ground ginger, garlic powder and red crushed peppers in a small bowl and mix it well together. After the chicken cook for about 5 minutes add the mixture you made in the bowl which consist of the Soy sauce and other seasonings to the chicken in the pan. Continue to stir and let the chicken continue to cook for another 5 minutes (total about 10 minutes).While the chicken is cooking, chop the stalks of celery, green pepper, red pepper, garlic cloves and onion. Prep the cup of broccoli florets. Add the veggies to the pan. ( add the water chestnuts if you like) Then add the chicken broth and corn starch and stir continuously until boiling and veggies are tender. About 5 to 7 minutes.
I served it over brown rice. It was so good that I hadn't realized that I didn't get a picture of the dish when I got finished. :-( but trust me it was the bomb)! :-) and Viola!
